Chicken Noodle Soup

  • 4 Boneless skinless chicken breasts (Cubed)
  • 3 stalks Celery (Diced)
  • 1 Large Onion (Chopped)
  • 1 teaspoon Garlic (Minced)
  • 2 cups Carrots (Diced)
  • 4 tablespoons Butter
  • 1 bag Broad egg noodles
  • 4 quarts Chicken stock or bullion
  • .25 cup Parsley (*Optional)
  • 2 teaspoons Dr. Meaux’s Cajun Recipe Seasoning (*more to taste if needed)


Step 1 Season cubed chicken and set aside.
Step 2 Melt butter in a large pot.
Step 3 Add onions, celery, and parsley and cook for a few minutes.
Step 4 Add ½ of the chicken stock and bring to a boil.
Step 5 Add chicken and cook for 10 minutes.
Step 6 Add carrots and cook for 5 minutes.
Step 7 Add egg noodles and cook for 5 minutes or until the noodles are almost done.
Step 8 Add the rest of the stock and take the pot off the heat. Keep covered for 5 minutes then serve.
